Tomato Recipe #1

Now that I’ve started harvesting my lovely tomatoes, I need to figure out what to do with them all before they go bad!

Tonight I kept it simple, making spaghetti with tomato sauce. I chopped up about 4 tomatoes and tossed them in to a sauce pan with vegetable broth. I let that cook for a few minutes on high until it started to boil, then I turned it down to medium heat. I put in salt to taste, about a tablespoon of oil and a minced garlic.

Towards the end I tossed in some leftover sautéed peppers. I would love to say it was the best thing I ever made, but adjustments definitely are in order. In came out just a little too thin. Next time I will have to try it again with less broth and more tomatoes. Hopefully that will make it a richer sauce next time.
