Easy Bake Eggs

I guess this would be considered a frittata? I’m not sure, but either way it was a winner. I was looking for a way to make an easy egg dish that doesn’t require making a big mess. No oil splashes or burnt food on the stovetop that you just cleaned!

I used a quarter of a cup of chopped onion, chopped up a bell pepper and four Morningstar breakfast sausage patties. I cooked the frozen patties in the microwave for about three minutes and the vegetables for about a minute. While I didn’t sauté any of it, I didn’t want to put completely uncooked food in to the egg mixture. Once everything cooled down a bit I put 5 eggs into the bowl with the vegetables and sausage and added a splash of milk. Salt and pepper to taste, a half cup of shredded cheese, mix, and done! Pour it in to a casserole dish and cook at 350 degrees for 45 minutes ( my oven takes longer, so adjust accordingly. Look for a slight browning on the top).

Voila! Easy-bake eggs! Delicious, simple to make and easy to clean.
